It's Day 8. Shouldn't My Wine Be Fermenting?

Monday, April 23, 2012 by Ed Kraus

Wine Not FermentingHi:

Today is day 8 and I just transferred my wine from the plastic fermenter to a glass carboy like the homemade wine instructions say to do. I do not see the wine brewing at all. Shouldn't the wine still be fermenting? Do I have a problem?

Please help!
Robert

Hello Robert.

I am going to assume that you are making your wine from a wine ingredient kit such as our European Select or KenRidge Classic since you mentioned "day 8" much like their directions would.

How fast your fermentation goes can...

How Many Cans Should I Use In My Wine Recipes?

Monday, March 26, 2012 by Ed Kraus

Wine Making Fruit BaseHello EC Kraus Folks,

Thank you for the speedy delivery of my requested catalog.  I ordered it only a few days ago but now I've read the whole thing and am almost ready to place an order for a wine kit.  However, I have a questions.

I would like to buy a kit, but would prefer to make a fruit wine.  So I'm planning on buying the Your Fruit! Wine Making Kit and then buying the County Fair Fruit Base.  I'm confused about the number of cans (46 oz) I need or want... the catalog suggests using...

It Is Addictive!

Friday, January 27, 2012 by Customer Stories
My wife and I started making wine kits about 10 years ago. Since then many others have wanted to try their hand at it, and things have kind of mushroomed! There are now 10 different "wineries" in production throughout the year in our basement. Of course the sampling and comparing and sharing among friends is the greatest part, but the wine is the thing that brings us all together. None of us can drink commercial wine anymore so there is always something new fermenting. You can get a feel for the...Read More » »

Concentrate vs Grapes

Monday, January 16, 2012 by Ed Kraus

Quality Wine Making GrapesHello Kraus,

I have been making wine from top end ($200+) wine kits and really getting into it.

I was wondering if I should continue with wine kits or jump into creating wine from fresh grapes. I guess my questions is: What will produce a better red wine, a high end wine kit or quality fresh grapes?

Best Regards,
Dominick S.

What Causes A Wine To Taste Too Sour?

Monday, December 5, 2011 by Ed Kraus
wine is too tart sourGood day!

May I know what causes a fresh fruit wine to taste so sour? I've tested a homemade fresh fruit wine that is so sour, and what is the remedy to remove the taste?

Thanks very much!
Shirley S.
-----
Hello Shirley,

In almost all cases, the reason for a wine tasting too sour is too much acid. All fruits have various acids in them that contribute to a sharp/sour taste. If the fruit is too acidic, or too much fruit is used in the wine recipes, you can end up with a wine like you are...

Sediment In My Wine Bottles.

Monday, November 14, 2011 by Ed Kraus
Crystal Clear WineHi

After I bottle my wines, I'm getting a small amount of sediment in the wine bottles after about a month. Talking to several people about this, they say I'll probably always have this unless I start filtering my wine. I don't make a lot of wine so it is hard to justify buying a pressure wine filtering system.

My question is how do coffee filters compare with the wine filters you sell with your pressure filtering system for effectiveness on removing sediment? Or is there something else I could...

How To Handle That Last Bit Of Sediment

Monday, August 29, 2011 by Ed Kraus
Wine Sediment FermentationHi,

I have been making wine from homemade wine kits for about a year now and have a question about the sediment just when I am ready to bottle the wine. Sometimes I do another rack back to my plastic fermenter to clear out some of the sediment; however, there is always a little in the bottom. Should I buy a wine filter or just siphon the wine down to the sediment and disregard the stuff? Is the wine filter designed to filter out wine sediment and to clarify cloudy wine?

Thanks again,
Bill

Adding More Fruit To Your Wine Recipe (Part I)

Monday, April 4, 2011 by Ed Kraus

[This is part I of a 2 parts]

Blueberry Wine Hello,

Your blueberry wine recipe on your website states you need 13lbs of blueberries for making 5 gals. Will using 20lbs of blueberries add more color and flavor to the finished wine?

Thank-you
Gary C.
----------
Yes, adding more fruit to any wine recipe is going to intensify the flavor and add more color. But before you go taking this bit of information and run with it, here are some considerations that you may want to think over first.

How Can I Fix My Leaking Wine Barrel?

Monday, February 21, 2011 by Ed Kraus

Leaking BarrelHello:

Is there a service that can repair leaking oak wine barrels?  I had used mine for many years and did not do it for a while and now the barrel leaks when I try to put fluid into it.

Thanx,
Steve
----------
Good Afternoon Steve,

There is no repair service that we know of for individual wine barrels, but here are a couple of things you can try that might get your wine barrel back into service.

Keep adding water to the barrel until the wood has had time to swell back up. This could take a...

Can I Use Tap Water When Making Wine Kits?

Monday, January 24, 2011 by Ed Kraus

Making Wine With Tap WaterHello,

I am just getting ready to get my first batch of wine brewing with one of your wine making starter kits. I have a quick question. Is it was ok to use tap water from my sink to make this wine kit? Do I need to get bottle water from the store or what? We have good water here in our town, but I'm sure it has chlorine and other stuff in it.

Thanks,
Gerald

Degassing Homemade Wine

Monday, January 10, 2011 by Ed Kraus
CO2 GasAt the very center of wine making is the process of fermentation. Fermentation occurs because the yeast want to consume the sugars in a wine must. As a result the sugars are converted into both alcohol and CO2 gas by the fermentation. Normally as winemakers, we are concerned about the alcohol, but in this post we are going to change directions and talk a little about the gas.

Almost all of the CO2 produced during a fermentation dissipates into the air and goes away very quickly, but not all of...Read More » »

The Importance Of Aging Your Wines

Thursday, December 16, 2010 by Ed Kraus

Aging Homemade WineAlmost everyone understands that wines need to age, but very few people realize just how important aging actually is to a wine. Aging is a process that is most often either underestimated or completely ignored by the home winemaker.

In reality, I would venture to say that aging a wine is just as important as the quality of the grapes used to produce the wine. If you're missing either one, the wine will suffer noticeably.

Within the first 30 days of aging most people experience enough improvement...

Why Do Wine Recipes Call For Pectic Enzyme?

Thursday, November 11, 2010 by Ed Kraus
Pectic Enzyme For Wine RecipeHi

This is Greg again with another question.  I have been making wine with your concentrated homemade wine kits for several years and have had a lot of fun for sure.  I would like to make apple wine...  saw the apple recipe you have on your website.  It looks a lot like making wine from concentrate.  The only thing I do not understand is the pectic enzyme. What is that used for?

Dear Greg,

Pectic enzyme is called for in almost all wine recipes that use fresh fruit. The recipes you...Read More » »

Don't Waste The Wine!

Monday, November 1, 2010 by Ed Kraus

How To Make WineHello,

I bought two wine making kits from you that makes 6 gallons (30 bottles). Last night we bottled the the first wine and got 25 bottles. Is this about right considering you do lose some during racking? Approximately how much waste do you normally have due to sediments in the bottom?

Mary M.
__________

Dear Mary,

While there will be some waste, there should be nothing close to the five bottles you lost on your first batch. You should be losing no more than one bottle when making wine from...

Can I Make Wine As Good As The Pros? (Part I)

Monday, October 25, 2010 by Ed Kraus

Homemade WineHi...

I am seriously looking at making my own wine ...my only hesitation is a concern that I can only produce a very mediocre wine .. one that does not come close to commercial wine offerings (I have a 200 bottle cellar and enjoy wines from around the world). So understanding there are no guarantees and I am responsible for making the wine, can one make a comparable wine to mid range commercial offerings? Also, assuming that is my goal, which homemade wine kits would you recommend that...

I have been thinking bout making a wine or mead for the holidays. Possibly something with a slight cinnamon or clove flavor or maybe a cider flavor as well. Do you have any suggestions?

Thanks for your help.
