But what’s just as important, but not so easy to find are solid homemade wine instructions.   1. The recipes & instructions that came with my wine making kit did not say that I was to add water into the airlock. It has been siphoned twice now & has a "moldy" look that has appeared on top of both batches. Are they ruined or can they be siphoned off? They are both fruit wines.

  2. M Jackson, I can not give you a straight answer to your question. What I can tell you is that many wines can be saved that are in this predicament. It’s just a matter of how badly the wine has been affected. Siphon the wine away from the sediment and the stuff on top. Then treat it with 1-1/2 Campden Tablets per gallon. This will stop it from getting any worse, but you’ll have to make your own judgement as to whether this was caught in time.
