  1. I’m a beginning wine maker. So far, have tackled lime, plum and apple, with fairly decent results. However, I am still a bit confused about my pH meter. Lime wine (Skeeter’s Pea) is quite acidic, and I’m not sure about the acidity level – and/or how to read the meter. Thanks for all the information – it’s a great help.

  2. Betty, lime has a lot of acid, so whatever reading you are getting may be correct. You would like to have your starting wine must to have a pH in the range of 3.2 to 3.6. If it is low than this then some action will need t be taken on your part. Normally, what you would do is add a sugar/water mixture to the must to dilute the acid. Do this until the pH reads at least 3.2. Dissolve 2 pounds of sugar in 1 gallon of water and use that as your mix. As a final note, the pH scale works backwards: the lower the number the higher the acid.
