2. Understand the stuff you’re putting into your wine!

  1. Fred, there are several ways you can do this. This most common is to put them in a bath of sodium metabisulfite, citric acid and water. Use 1 teaspoon of sodium metabisulfite and 1/2 teaspoon of citric acid to each gallon of water. Leave the screw caps in the solution for 20 minutes. The only time I would not do this is if the screw caps have a cardboard liner. Then I would dip them in a solution of Basic A and let them air-dry before using.
